Yukon Gold Potato Salad, July 2019

Made with olive oil, this potato salad is always a family favorite, and quick to make!

2 lbs. Yukon gold potatoes, chopped into 2” pieces
9 Tbsp. vegetable oil
1 ½ Tbsp. NOBULL Original Scratch Starter Concentrate
2 tsp. cider vinegar
½ bunch of Italian parsley, rough chopped

Whisk oil and NOBULL Original Scratch Starter Concentrate together. Set aside.
Boil potatoes in lightly salted water until tender but still firm (approx. 15 minutes)
When tender, drain potatoes and place in medium size bowl.
While warm, add vinegar and mix. Then add half of NOBULL-oil mixture and gently toss. Add remaining NOBULL-oil mixture to taste.
Once cooled, add chopped parsley.

Serves 4-6
