Turkey Chili with Chocolate 


1 medium onion, chopped 

2 medium red bell peppers, diced 

6-8 cloves garlic, minced 

1 ½ lb. ground turkey 

6 tbsp. chili powder 

1 ½ tbsp. cumin 

1 tbsp. oregano 

2 bay leaves 

1 tsp. cinnamon 

1 oz. bittersweet chocolate, grated 

45 oz. pinto beans, drained 

28 oz. canned diced tomatoes  

4 c. water 

2 tbsp. Umami Mushroom NOBULL Scratch Starter Concentrate 

Optional: sour cream, grated cheddar cheese, chopped chives, hot sauce 


In a large pot, sauté onions and bell pepper over medium heat until soft.  

Add garlic and NOBULL and cook for 1 minute.  

Add turkey and cook until no longer pink. 

Add spices and chocolate, stir in until melted and combined, about 1 minute. 

Add beans, tomatoes, and water. 

Bring chili to a boil, then reduce to simmer. 

Cook uncovered for about 1 hour, stirring occasionally. 

Season with more NOBULL or spices as desired. 

Garnish with sour cream, cheddar cheese, chopped chives and a dash of hot sauce  

8 servings
