Rustic Gazpacho, August 2019

A favorite cold soup during hot days of summer’s tomato season!

2 pounds tomatoes, quartered
½ cup chopped red bell pepper
1 cup cucumbers, chopped
½ cup red onion, chopped
1 small jalapeno, seeded and minced (optional)
1 large clove garlic, minced
4 tsp. Mediterranean NOBULL Scratch Starter Concentrate
Juice of 1 lime
2 tsp. balsamic vinegar
2 tsp. Worcestershire sauce (optional)
½ tsp. cumin
¼ tsp. black pepper
Garnish: Olive oil + avocado chunks (optional)

Place all ingredients in a blender and blend until desired texture.
Adjust with additional NOBULL to taste.
Garnish with a drizzle of olive oil + avocado before serving.

Yield: 4- 6 servings
