Tahini with roasted veggies is so delicious!
Feel free to swap out other veggies through out the season!
½ large cauliflower, cut to bite size pieces
1 large stalk broccoli (amount approx. equal to cauliflower) cut to bite size pieces
2 T. vegetable oil
½ c. tahini
½ c. water
1 tsp. cumin
2 tsp. lemon juice
3 tsp. NOBULL Original Scratch Starter Concentrate
Procedure for Roasting
Preheat oven to 400˚F. In large bowl, mix oil and 1 tsp. NOBULL Original Scratch Starter Concentrate. Toss cauliflower and broccoli to coat completely. Lay cauliflower and broccoli on a sheet tray in a single layer. Drizzle any remaining marinade on top of the vegetables. Roast approximately 40 minutes, until vegetables are caramelized. Prepare the tahini sauce with vegetables are roasting.
Procedure for Tahini
With a fork, whip the tahini and ½ c. water together in a medium size bowl. Whip in the remaining water, 2 tsp. NOBULL Original Scratch Starter Concentrate, lemon juice and cumin. Season with additional NOBULL to taste.
Note: For a thinner tahini, add more water.
