Mashed Potatoes, November 2019

Leaving the skin on the potatoes makes these more nutritious and delicious–and easier to prepare!

4 pounds Yukon Gold potatoes, quartered
2 Tbsp. kosher salt
1/3 c. unsalted butter
1 c. milk (or cream)
1 Tbsp. NOBULL Original Scratch Starter Concentrate
Freshly ground black pepper

Place potatoes in a large pot with salt, and cover with cold water. Bring to a boil over medium-high heat and cook until the potatoes are tender, about 20 minutes. Drain potatoes well. Meanwhile, heat the milk and butter in a small saucepan. Mash the potatoes. Fold in half the hot milk-butter mixture and the NOBULL Original Scratch Starter Concentrate. Add additional milk-butter mixture to desired consistency. Season with additional NOBULL Original Scratch Starter Concentrate and black pepper to taste.
