Italian Pasta Salad, June 2019

1 1/2 c. rotini pasta, dry
1/2 c. red pepper, diced
1/8 c. red onion, diced
1/4 c. salami, diced
1/4 c. kalamata olives, sliced
1/4 c. fresh mozzarella, chopped
1 c. spinach, chopped
2 tbsp. olive oil
1 tbsp. + 1 tsp. red wine vinegar
1 tsp. oregano, dried
2 tsp. NOBULL Mediterranean Scratch Starter Concentrate

Cook pasta according to instructions, drain and allow to cool. In a large bowl combine red pepper, onion, salami, olives, spinach and feta. In a smaller bowl, whisk together oils, vinegar, oregano and NOBULL Mediterranean Scratch Starter Concentrate. Coat vegetables with the vinaigrette and add pasta. Toss gently to combine.

Yield: 6 servings
