Grilled Eggplant

This is a NOBULL staff favorite this time of year!

1 large globe eggplant, cut into ½ inch thick rounds
4 Tbsp. olive oil
2 tsp. NOBULL Mediterranean Scratch Starter Concentrate

Heat grill (gas or charcoal) to medium-high heat. Mix together olive oil and NOBULL Mediterranean Scratch Starter Concentrate. Brush olive oil-NOBULL mixture on both sides of each eggplant slice. Grill until grill marks appear (4-5 minutes). Turn slices over, cook eggplant until inside is soft and eggplant is slightly charred (4-5 minutes).

Serve warm or room temperature.
