This is a great, quick summer soup! Feel free to use a combination of buttermilk & (plain) yogurt for a more tangy and thicker textured soup.
1 ½ pounds (about 2 large) cucumbers, chopped
2 Tbsp. white onion, chopped
1 c. buttermilk
2 tsp. Original NOBULL Scratch Started Concentrate
1 Tbsp. lemon juice
3 Tbsp. fresh dill, chopped
Black pepper to taste
Garnish: Olive oil + fresh dill
Place ingredients in a blender and blend until desired texture. Adjust with additional NOBULL, lemon juice, and black pepper as desired. Garnish with a drizzle of olive oil & fresh dill before serving.
Yield: 3-4 servings
