Essential Ratios

The ratios below are guidelines developed in our R&D kitchen for using NOBULL Scratch Starter Concentrates. NOBULL starters are very flexible and these ratios can easily be adjusted up or down as needed. It’s also easy to layer other flavors on top of NOBULL (i.e. cumin, Thai chilies, turmeric, etc.) to create dishes from around the globe, using NOBULL as the flavor foundation. The ratios and recipes featured here have been developed in our R&D kitchen to not require additional salt – we have used NOBULL in its place!

Generally: Substitute 2 tsp. of Scratch Starter for 1 tsp. of salt in your existing recipes.
Reduced Sodium: Use half the Scratch Starter outlined below. Or to taste.

Remember, our Scratch Starters are concentrated – a little goes a long way.

Featured Seasonal Recipe from the NOBULL R&D Kitchen:

Grandma’s Chicken Soup

Ingredients:

  • 1 1/2 large onions, whole & peeled
  • 4 large carrots, chopped into 1″ pieces
  • 1 lb. drumsticks
  • 3/4 lb. chicken feet
  • 2 bay leaves
  • 1/4 bunch Italian parsley, fresh
  • 1/2 tsp. peppercorns
  • 3 Tbsp. + 1 tsp. Original NOBULL Scratch Starter Concentrate
  • 8 cups water, cold

Procedure:

Place all ingredients in a large stockpot
Bring to a boil, reduce heat to a simmer
Simmer for 2 hours, covered
Strain chicken through fine mesh sieve into a large stock pot
Remove meat from drumsticks and add back into soup, along with carrots and onions, if desired
Add additional NOBULL to taste

Yield: 6-8 servings

SOUPS

Mushroom – Buckwheat Soup

Ingredients:

  • 2 Tbsp. olive oil
  • 8 oz. mushrooms, chopped
  • 2 cloves garlic, minced
  • 2 medium leeks, sliced
  • 2 celery stalks, sliced
  • 2 carrots, sliced
  • 8 cups cold water
  • 4 Tbsp. Umami Mushroom NOBULL Scratch Starter Concentrate
  • 1 c. whole grain buckwheat
  • 3 c. spinach or kale, chopped

Procedure:

In soup pot, heat oil and add mushrooms. Cook until mushrooms are softened and begin to brown
Add remaining vegetables and cook until leeks are translucent
Add water and whisk in Umami Mushroom NOBULL Scratch Starter Concentrate to combine
Bring to a boil then reduce to a simmer, cook for 10 minutes
While stirring, add in buckwheat and continue to simmer until buckwheat is fully cooked
Stir in greens and cook until tender
Taste and adjust with additional Umami Mushroom NOBULL Scratch Starter Concentrate as needed

Yield: 6-8 servings

Creamy Sweet Potato Soup

Ingredients:

  • 4 Tbsp. olive oil
  • 2 medium shallots, diced
  • 3 cloves garlic, chopped
  • 1 1/2 lbs. sweet potatoes, peeled, 1″ dice
  • 5 cups cold water
  • 3 Tbsp. + 1 tsp. Original NOBULL Scratch Starter Concentrate
  • 1/2 c. mascarpone
  • 2 tsp. sherry vinegar

Procedure:

In soup pot, cook shallots and garlic in olive oil until fragrant and translucent
Add sweet potatoes and water. Bring to a boil, reduce to a simmer
Cook until potatoes are tender, approximately 20 minutes
Remove from heat, add NOBULL Scratch Starter Concentrate
Puree using an immersion blender
When smooth, add mascarpone and sherry vinegar. Blend until combined
Garnish as desired

Yield: 6-8 servings

Moroccan Chicken and Couscous Soup

Ingredients:

  • 2 Tbsp. olive oil
  • 1/2 lb. chicken, diced
  • 2 cloves garlic, minced
  • 1/2 yellow onion, sliced
  • 1 stalk celery, sliced
  • 1 large carrot, sliced
  • 1/8 tsp. cayenne pepper
  • 1/16 tsp. cinnamon, ground
  • 1/2 tsp. coriander, ground
  • 3/4 tsp. turmeric, ground
  • 3 Tbsp. + 1 tsp. Carrot Ginger NOBULL Scratch Starter Concentrate
  • 1 medium potato, 1/2″ dice
  • 1 14.5 oz. can diced tomatoes
  • 4 c. water
  • 1/4 c. couscous

Procedure:

In a soup pot, cook chicken in olive oil for 2 minutes
Add vegetables and cook until aromatic
Add spices and Carrot Ginger NOBULL Scratch Starter Concentrate
Cook until fragrant and onions are translucent
Add diced tomatoes and water
Bring to a boil, then reduce to a simmer
Cook until vegetables are tender
Add potatoes and couscous and simmer until done
Taste and adjust with additional NOBULL Scratch Starter Concentrate as needed

Yield: 6-8 servings

Tomato – Bulgur Soup

Ingredients:

  • 2 Tbsp. olive oil
  • 1 medium onion, sliced
  • 1 celery stalk, sliced
  • 1 Tbsp. garlic, minced
  • 1 tsp. thyme, dried
  • 1/2 c. white wine
  • 3 Tbsp. + 1 tsp. Mediterranean NOBULL Scratch Starter Concentrate
  • 3 c. canned diced tomatoes
  • 5 c. water
  • 3/4 c. bulgur
  • Parmesan cheese to garnish

Procedure:

In a soup pot, saute vegetables and thyme until fragrant and onions are translucent
Add white wine and bring to a boil
Stir in Mediterranean NOBULL Scratch Starter Concentrate
Add tomatoes
Bring to a boil, reduce to a simmer and cook for 15 minutes
Stir in water and bulgur, cover and cook until bulgur is tender
Add additional water as needed for desired consistency
Taste and adjust with additional NOBULL Scratch Starter Concentrate as needed
Garnish with Parmesan cheese

Yield: 6-8 servings

PROTEINS

Roasted Salmon

Ingredients:

  • 1 lb. salmon, cut into 4 oz. fillets
  • 1 1/2 tsp. NOBULL Scratch Starter Concentrate, any variety
  • 1 Tbsp. olive oil

Procedure:

Heat oven to 400°F
Line sheet trays with parchment and place fillets on the trays
Mix NOBULL Scratch Starter Concentrate with oil
Using a pastry brush, coat the fillets with the NOBULL/oil mixture
Roast 12-14 minutes or until just cooked

Yield: 4 servings

*Note: While any variety of NOBULL will work, our house favorites are Carrot Ginger and Umami Mushroom

Baked Chicken Drumsticks

Ingredients:

  • 12 drumsticks
  • 1 Tbsp. + 2 tsp. Scratch Starter Concentrate, any variety
  • 1/3 c. vegetable oil

Procedure:

Preheat oven to 400°F
Pat drumsticks dry with a paper towel (for crispy skin)
Whisk NOBULL and oil together
Coat drumsticks (marinate up to 30 minutes or refrigerate overnight, as desired)
Line a sheet tray with parchment
Place drumsticks on sheet tray and place in the oven
Cook 40-45 minutes or until cooked through (internal temperature reads 185°F

Yield: 3-4 servings

Beef Stroganoff

Ingredients:

  • 1 lb. Sirloin steak, cut into 1″ strips
  • 2 Tbsp. butter
  • 1/4 c. onion, minced
  • 1 clove garlic, minced
  • 1/2 lb. mushrooms, sliced
  • 1/4 c. lemon juice
  • 4 tsp. Umami Mushroom NOBULL Scratch Starter Concentrate
  • 2 c. water
  • 1 c. sour cream
  • 2 tsp. Original NOBULL Scratch Starter Concentrate
  • Cooked egg noodles

Procedure:

In saute pan, brown beef in butter
Add onion and garlic, cook until aromatic
Add mushrooms and lemon juice, cook until mushrooms begin to soften
Whisk Umami Mushroom NOBULL Scratch Starter Concentrate into water and add to pan
Bring to a simmer, cover pan part way and cook until steak is tender, approximately 15 minutes
Reduce heat to low, stir in sour cream and Original NOBULL Scratch Starter Concentrate
Continue to stir until warmed through and slightly thickened
Adjust with additional NOBULL as needed
Serve over egg noodles

Yield: 4 servings

Meatloaf (GF option)

Ingredients:

  • 1 lb. ground meat (beef, turkey, etc.)
  • 4 tsp. NOBULL (Mediterranean recommended)
  • 1/2 c. yellow onion, minced
  • 1 egg
  • 1/2 c. bread crumbs (GF option: GF bread crumbs or ground rice Chex)
  • 1-2 cloves garlic, minced

Procedure:

Preheat oven to 350°F
Mix all ingredients together
Place in a loaf pan or shape into a loaf and place on sheet tray with parchment
Coat with ketchup OR 1/2 c. diced tomatoes cooked with 2 T. Mediterranean NOBULL, 1 T. cider vinegar and 1/4 – 1/2 c. brown sugar
Bake for 45 minutes – 1 hour (or until thermometer tests at 160 °F)

Yield: 4-5 servings

VEGETABLES

Garlicky Braised Greens

Ingredients:

  • 2 Tbsp. olive oil
  • 1 Tbsp. garlic, minced
  • 1 Tbsp. NOBULL Scratch Starter Concentrate, any variety
  • 1 lb. winter greens, washed and stemmed
  • 1-2 Tbsp. water, as needed
  • 1 Tbsp. vinegar, champagne or apple cider

Procedure:

In a large pot, saute garlic in olive oil until fragrant
Add NOBULL Scratch Starter Concentrate
Cook, stirring frequently, until fragrant
Add winter greens and stir until they begin to wilt
Add water if needed to help braise
Cover and cook until greens are tender, 5-10 minutes
Stir in vinegar and season to taste with additional NOBULL Scratch Starter Concentrate

Yield: 4-5 servings

Sweet Potato Latkes

Ingredients:

  • 1/2 lb. sweet potatoes, shredded
  • 1 green onion, sliced
  • 1/4 c. AP flour
  • 1 egg
  • 2 tsp. Original NOBULL Scratch Starter Concentrate
  • 1/4 tsp. black pepper
  • Oil as needed to saute

Procedure:

Combine all ingredients in a bowl
Heat oil in a large skillet
Spoon 2 Tbsp. of mixture into skillet and flatten with a metal spatula
Cook until golden brown, approximately 1 1/2 minutes per side

Yield: 4-5 servings

Roasted Carrots

Ingredients:

  • 1 lb. carrots
  • 1 Tbsp. oil
  • 1/2 tsp. NOBULL Scratch Starter Concentrate, any variety

Procedure:

Preheat oven to 400°F
In large bowl, mix oil and NOBULL Scratch Starter Concentrate
Toss carrots to coat completely
Lay carrots on a sheet tray in a single layer
Scrape any remaining marinade on top of the carrots
Roast approximately 40 minutes, until carrots are caramelized

Yield: 4-5 servings

SAUCES

Tahini

Ingredients:

  • 1/2 c. tahini
  • 1/2 c. water
  • 1 tsp. cumin
  • 2 tsp. lemon juice
  • 2 tsp. NOBULL Original Scratch Starter Concentrate

Procedure:

With a fork, whip the tahini and 1/4 c. water together in a medium bowl
Whip in the remaining water and the rest of the ingredients.
Season with additional NOBULL to taste.

Note: For a thinner tahini, add more water. For a salad dressing, thin with additional water and season to taste.

Yield: About 8 servings

Quick Tomato Sauce

Ingredients:

  • 1 Tbsp. NOBULL (Mediterranean)
  • 1 Tbsp. olive oil
  • 1 clove garlic
  • 15 oz. tomatoes (diced)
  • 1 Tbsp. cream (optional)

Procedure:

Heat oil with garlic until fragrant
Add NOBULL and cook 1 minute
Stir in tomatoes, simmer for 10 minutes
Stir in cream just before serving, if desired

Yield: About 4 servings

GRAINS

Rice Pilaf

Ingredients:

  • 1 c. brown rice
  • 2 c. water
  • 1 Tbsp. olive oil
  • 1 Tbsp. + 2 tsp. NOBULL Scratch Starter Concentrate, any variety

Procedure:

Place water in a pot, cover and bring to a boil
When water is boiling, add rice, oil and NOBULL Scratch Starter Concentrate
Stir, cover and bring to a boil
Simmer for 45-60 minutes or until rice is cooked

Yield: 4 servings
