The only ingredients are fresh, sustainably sourced onions, carrots, sea salt, parsley, and cilantro.

NOBULL Carrot Ginger Scratch Starter Concentrate The Carrot Ginger Scratch Starter is highly aromatic and adds the warmth of ginger without adding heat. Use this blend for both sweet and savory applications. This product is made with fresh, sustainably sourced onions, carrots, ginger, sea salt, and cilantro.

NOBULL Mediterranean Scratch Starter Concentrate Sun-dried tomatoes blended with fresh herbs create deep, rich tones in the Mediterranean Scratch Starter. Using this variety will add umami to your cooking. Its savory flavor comes only from fresh, sustainably sourced onions, carrots, sun-dried tomatoes, sea salt, parsley, sage, and oregano.

NOBULL Umami Mushroom Scratch Starter Concentrate This scratch starter creates a rich, savory and earthy flavor. The only ingredients are sustainably sourced fresh mushrooms and onions, sea salt, shiitake powder and porcini powder.

Always spoon-ready (even from the freezer), Scratch Starters are highly versatile and can be used cooked or un-cooked as a seasoning for grains and roasted vegetables, a foundation for a marinade or vinaigrette and as a flavor base for meats, pastas, breads, cocktails, juices and more! NOBULL’s Scratch Starter® Concentrates were created for high volume kitchens and food manufacturers. We offer pricing on individual cases and 32# pails as well as volume discounts. SOUPS

Chicken Soup

Ingredients:

  • 3 large onions, whole and peeled
  • 8 large carrots, chopped into 1″ pieces
  • 2 lbs. drumsticks
  • 1 1/2 lbs. chicken feet
  • 2 bay leaves
  • 1/4 bunch fresh Italian parsley
  • 1 tsp. peppercorns
  • 4 oz. Original NOBULL
  • 14 c. cold water

Procedure:

Place all ingredients in a large stock pot
Bring up to a boil and then turn heat down to simmer
Simmer for 2 hours, covered
Strain chicken stock through a fine mesh sieve into a large stock pot
Remove meat from drumsticks and add back into soup, along with carrots and onions, if desired
Add additional Original NOBULL to taste

Yield: 1 gallon

Lentil Soup

Ingredients:

  • 4 tbsp. vegetable OR olive oil
  • 1 c. onion, diced
  • 2 c. carrot, diced
  • 2 c. celery/celeriac, diced
  • 4 c. French lentils
  • 4 oz. Mediterranean NOBULL
  • 16 c. water
  • spinach, if desired

Procedure:

Saute vegetables in oil until onions are translucent
Rinse lentils and drain
Stir in lentils and add water
Bring to a boil, reduce heat and simmer for 30 minutes or until lentils are soft
Add Mediterranean NOBULL and stir to combine
Puree 4 cups of soup and add back in for thickened soup
Add additional NOBULL to taste
Add spinach just before serving, if desired

Yield: 1 gallon

SALADS

Quinoa Salad

Ingredients:

  • 2 c. uncooked quinoa
  • 5 c. water
  • 5 oz. Sherry vinegar
  • 1 1/2 tsp. dijon mustard
  • scant 2 tbsp. Original NOBULL
  • 1/4 tsp. black pepper
  • 3/4 c. olive oil
  • 3 c. greens (spinach, arugula or tatsoi), washed and roughly chopped

Procedure:

Rinse quinoa in a fine mesh sieve until water runs clear, drain and transfer to a medium pot
Add 2 cups water and bring to a boil
Cover, reduce heat to low and simmer until water is absorbed, 15 to 20 minutes
Set aside off the heat for 5 minutes; uncover and fluff with a fork
In a medium bowl, whisk together the vinegar, dijon mustard, NOBULL and black pepper
Slowly add oil, whisking until emulsified
Once quinoa has cooled, mix in greens and 1 c. vinaigrette
Season to taste

Yield: 2 quarts

Potato Salad

Ingredients:

  • 2 lbs. Yukon gold potatoes, chopped into 2″ pieces
  • 9 tbsp. vegetable oil
  • 1 1/2 tbsp. NOBULL (Original or Mediterranean)
  • 2 tsp. cider vinegar
  • 1/2 bunch of Italian parsley, roughly chopped

Procedure:

Whisk oil and NOBULL together, set aside
Boil potatoes in lightly salted water until tender but still firm (approx. 15 mins)
When tender, drain potatoes and place in medium bowl
While warm, add vinegar and mix
Add half of NOBULL/oil mixture and gently toss
Add remaining NOBULL/oil mixture to taste
Once cooled, add chopped parsley

Yield: 3 quarts

PROTEINS

Braised Beef

Ingredients:

  • 6 1/2 lbs. beef chuck
  • 1 oz. oil
  • 1 1/2 lb. onion, diced
  • 6 1/2 oz. Mediterranean NOBULL
  • 2 – 2 1/2 c. water

Procedure:

Cut chuck into 2″ cubes
In a large saucepan over medium heat, brown beef in batches, adding oil as needed to prevent sticking
Set beef aside, retaining oil and pan drippings
Add any remaining oil, onions and NOBULL
Saute until onions are barely translucent
Add beef back to pot, stir to combine with onions and pour water over the top
Cover with a lid, bring to a boil
Reduce heat and simmer 2 1/2-3 hours until meat pulls apart easily with a fork

Yield: 3 quarts

Fish Cakes with Kale

Ingredients:

Salmon Cakes:

  • 1 1/2 lb. chopped fish, preferably fresh (salmon, cod, steelhead, etc.)
  • 1 1/2 oz. Carrot Ginger NOBULL
  • 1 1/2 tsp. lemon juice
  • 1/4 onion, chopped
  • 2 cloves garlic, chopped
  • 1/4 c. blanched, squeezed and chopped kale
  • 2/3 c. almond meal
  • 1 egg
  • black pepper to taste

Carrot Ginger Sauce:

  • 1/4 c. mayonnaise
  • 2 tsp. Carrot Ginger NOBULL
  • 1 1/2 tsp. lemon juice
  • 1/4 tsp. sesame oil
  • 1 tsp. minced ginger
  • black pepper to taste

Procedure:

Salmon Cakes:

Saute onions in vegetable oil until translucent
Add garlic and kale, cook until garlic is soft
Set vegetables aside and let cool
In a medium bowl, mix all ingredients for the salmon cakes
Form into 1/4 lb. patties
Fry in vegetable oil over medium heat until done

Carrot Ginger Sauce:

Mix all ingredients together
Let sit for 30 minutes or until salmon cakes are ready to serve

Yield: 8 patties

Meatloaf (GF option)

Ingredients:

  • 1 lb. ground meat (beef, turkey, etc.)
  • 1 oz. NOBULL (Mediterranean recommended)
  • 1/2 c. yellow onion, minced
  • 1 egg
  • 1/2 c. bread crumbs (GF option: GF bread crumbs or ground rice Chex)
  • 1-2 cloves garlic, minced

Procedure:

Preheat oven to 350°F
Mix all ingredients together
Place in a loaf pan or shape into a loaf and place on sheet tray with parchment
Coat with ketchup OR 1/2 c. diced tomatoes cooked with 2 T. Mediterranean NOBULL, 1 T. cider vinegar and 1/4 – 1/2 c. brown sugar
Bake for 45 minutes – 1 hour (or until thermometer tests at 160 °F)

Encrusted Chicken

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 egg, whisked with 1/4 tsp. NOBULL
  • 1/4 c. AP flour
  • 1 c. Panko bread crumbs
  • 1 tbsp. + 1 tsp. NOBULL (variety of your choice)

Procedure:

Preheat oven to 375°F
Line a sheet tray with parchment
Rinse and dry chicken breasts
Crack egg into a bowl, add 1/4 tsp. NOBULL, scramble
Add 1 tbsp. NOBULL to Panko bread crumbs, incorporate
Dredge as usual (flour, egg, Panko)
Place on tray and bake for 25-30 mins, or until done

VEGETABLES

Roasted Sweet Potatoes

Ingredients:

  • 2 lbs. sweet potatoes
  • 3 tbsp. vegetable oil
  • 1 1/2 tbsp. Carrot Ginger NOBULL
  • 3 tbsp. brown sugar

Procedure:

Preheat oven to 425°F
Cut unpeeled sweet potatoes into 2″ chunks, set aside
In medium bowl, mix remaining ingredients together
Toss sweet potatoes into oil mixture
Place on a pan and roast for 1 hr. or until desired texture

Roasted Portabellas

Ingredients:

  • 2 large portabellas
  • 6 tbsp. vegetable oil
  • 1 tbsp. Mediterranean NOBULL

Procedure:

Preheat oven to 375°F
Line a sheet tray with parchment
Whisk oil and NOBULL together
Rub 1 tbsp. of the mixture on the outside of the caps
Place portabellas on sheet pan
Drizzle mixture onto gills, rub gently
Bake 20 minutes

GRAVY

Meat Gravy

Ingredients:

  • 1 lb. meat trimmings
  • up to 2 oz. vegetable oil
  • 2 oz. AP flour (can substitute GF)
  • 2 oz. Umami Mushroom NOBULL
  • 1 qt. water

Procedure:

Preheat oven to 400°F
Place meat trimmings on a roasting pan and roast until golden brown, stirring often
Remove from oven and reserve rendered fat for roux
Add vegetable oil as needed to rendered fat to make 2 fluid ounces
In a sauce pan, heat fat/oil, whisking in flour to make a roux
Cook for 2-3 minutes, until evenly mixed and roux darkens slightly
Whisk in water
Add meat scraps, stir well and bring to a boil
Reduce heat and simmer uncovered for 20-30 minutes, until all traces of starchiness are cooked off
Strain
Whisk in Umami Mushroom NOBULL; simmer for 5 minutes
Adjust seasoning as needed and serve

Mushroom Gravy (Vegan)

Ingredients:

  • up to 2 oz. oil
  • 2 oz. AP flour (can substitute GF)
  • 1/2 lb. mushrooms, sliced
  • 2 oz. Umami Mushroom NOBULL
  • 1 qt. water

Procedure:

In a sauce pan, heat oil
Whisk in flour to make a roux
Cook for 2-3 minutes until evenly mixed and roux is slightly darkened
Whisk in water
Add mushrooms, stir well and bring to a boil
Reduce heat and simmer for 20-30 minutes, until all traces of starchiness are cooked off
Whisk in Umami Mushroom NOBULL
Simmer for 5 minutes, adjust seasoning as needed

DRESSINGS

Carrot Ginger Vinaigrette

Ingredients:

  • 2 oz. Carrot Ginger NOBULL
  • 4 oz. cider vinegar
  • 12 oz. vegetable oil
  • 1 tsp. honey, optional

Procedure:

Whisk vinegar and NOBULL together
Add honey (optional)
Whisk in oil

Yield: 1 pint

Umami Mushroom Vinaigrette

Ingredients:

  • 2 oz. Umami Mushroom NOBULL
  • 4 oz. rice wine vinegar
  • 1 oz. sesame oil
  • 9 oz. vegetable oil

Procedure:

Whisk vinegar and NOBULL together
Whisk in oil
Season to taste

Yield: 1 pint

Lemon Parsley Sauce

Ingredients:

  • 2 tbsp. Original NOBULL
  • 1 1/2 c. vegetable oil
  • juice & zest of 1 lemon
  • 1 clove garlic
  • 1 bunch Italian parsley

Procedure:

Finely chop parsley and garlic in a food processor
Place parsley mixture in a bowl with remaining ingredients
Mix and serve

DRINKS

Bloody Mary

Ingredients:

  • 1 1/2 oz. vodka
  • 1 tsp. Mediterranean or Original NOBULL
  • 4 oz. tomato juice
  • black pepper
  • Worcestershire (optional)

Procedure:

Place all ingredients into a pint glass, stir vigorously
Add ice to fill
Season to taste
Garnish as desired

Yield: 1 pint

Savory Carrot Juice

Ingredients:

  • 16 oz. carrot juice
  • 2 tsp. Carrot Ginger NOBULL

Procedure:

Stir together
Enjoy!
