Meatloaf (GF option)

Ingredients:

  • 1 lb. ground meat (beef, turkey, etc.)
  • 4 tsp. NOBULL (Mediterranean recommended)
  • 1/2 c. yellow onion, minced
  • 1 egg
  • 1/2 c. bread crumbs (GF option: GF bread crumbs or ground rice Chex)
  • 1-2 cloves garlic, minced

Procedure:

Preheat oven to 350°F
Mix all ingredients together
Place in a loaf pan or shape into a loaf and place on sheet tray with parchment
Coat with ketchup OR 1/2 c. diced tomatoes cooked with 2 T. Mediterranean NOBULL, 1 T. cider vinegar and 1/4 – 1/2 c. brown sugar
Bake for 45 minutes – 1 hour (or until thermometer tests at 160 °F)

Yield: 4-5 servings
