Clam Chowder

Ingredients

3T. butter, unsalted
1⁄4 tsp. chili flake (optional)
1 1⁄4 c. celery
1 1⁄4 c. onion
1.75 lbs. russet potatoes, diced
6 T. Original NOBULL Scratch Starter Concentrate
1 1⁄2 cups clam juice (juice from 3 cans of clams, drained) 6 cups milk
1 cup clams (3 cans of clam meat)
1 1⁄4 tsp. thyme, fresh
1⁄2 tsp. black pepper, fresh
2 T. parsley

Procedure

Sweat the onion and celery with the chili flake.
Add diced potatoes, stir to coat.
Add NOBULL.
Add clam juice, if doesn’t completely cover potatoes add milk as needed. Simmer until potatoes are cooked through.

Puree 1/3 of potato mixture, using cold milk as needed to make smooth.
Add puree back into the soup.
Add milk and remaining ingredients.
Bring the entire mixture up to a simmer, taste. season with more NOBULL as needed.
